•1/2 cup raw almonds
•2 tablespoons white balsamic vinegar
•4 tablespoons olive oil
•1 teaspoon Dijon mustard
•1 cup of flat leaf parsley
•2 fennel bulbs, sliced extra thinly
•2 sweet oranges, peeled and segmented
•Salt and pepper

•Make dressing with vinegar, olive oil and Dijon mustard.
•Mix fennel, orange segments, parsley and almonds in a large mixing bowl.
•Sprinkle dressing over combined ingredients and add salt and pepper to taste.
•Serve it straightaway.
