Focaccia bread recipe and 2 variations

Here are variations on the recipe for homemade Focaccia bread. There are many different kinds of toppings you can add to your Focaccia bread to make it taste especially delicious. Just like with rolls, you can tailor the bread to your specific taste buds and make a dynamite recipe.

For example, you can top it with freshly chopped garlic and sprinkle on some dried basil.

You can top each loaf with a cup of sharp shredded cheddar. For a slightly spicy dish, top it with some jalapeno peppers before baking.

Another variation is to add your choice of spices and/or grated cheese to the dough as you are kneading it and forming the loaves.



2 ¼ tsp yeast

1 tbsp sugar

1 1/3 cup warm water

3 ½ cups flower

2 tbsp olive oil

1 tbsp salt

Sea salt

Herbs and cheese


Begin by combining the yeast, sugar, and warm water in a bowl. Let it stand for about 10 minutes.

Add the remaining ingredients and knead the dough by hand until it’s smooth and elastic. This should take about 10 minutes.

Put the dough onto a flowered surface and cut it into two equal parts. Put each part into an oiled glass pan. Keep pushing and pinching the dough until it fills up every corner and edge. Repeat this for the second pan. Preheat your oven to 400 degrees.

Place a towel over the dough and let it rise in a warm place for 1 – 2 hours.

Drizzle oil over the surface of each loaf and spread it evenly. Sprinkle on the sea salt and other toppings and bake for about 25 minutes, or until the bread has a nice golden color.
